What’s on in Wyndham Vale – May 2020

Welcome to May!

The school holidays may have finished and although many of us are still working and schooling from home in order to practise safe self distancing measures, it doesn’t mean that there aren’t a whole lot of fun activities for the whole family to be enjoyed in the space and comfort of your own home.

Our Jubilee @Home round up of activities for the month definitely has something for everyone – big and small, from at home fitness, lessons and games, to cooking and virtual tours.

We hope our Jubilee families and wider community have fun with this great list for May, and don’t forget to post and tag us doing your favourite activities of the month.

Stay safe and healthy!

Use Up Those Overripe Bananas In This Epic Sugar Free Banana Bread Recipe

If there’s one thing we know you will never get sick of, its warm, toasty banana bread with lashings of butter! This recipe is acceptable to eat for breakfast, lunch and dinner as The Wandering Matilda has gone and made it oh-so-healthy.

It is gluten-free, dairy-free and refined sugar-free so you need not feel guilty when you’re devouring your third piece for the day.

  • 2 tbs coconut oil
  •  4 eggs
  • 3 tbs honey
  • 1 tsp vanilla extract
  • 1/2 tsp apple cider vinegar
  • 1/2 cup coconut flour
  • 1/4 cup almond meal
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup coconut milk
  • 3 ripe bananas
  • 1/2 cup dark chocolate chips

Preheat your oven to 180 and line a loaf tin with baking paper.

In a bowl mix together the wet ingredients until smooth. In another bowl mix together the dry. Add the wet mixture to the dry and stir through until fully combined.

In a separate bowl, mash the bananas and coconut milk with a fork until smooth. Add in the chocolate then combine into the batter.

Pour the batter into the tin and bake for 40 minutes or until a skewer comes out clean. Leave the loaf to cool in the pan before tucking in.
